Sweet Potato Casserole

sweet potatoes2.5 lbs

🍳 Cookware
- casserole dish

1Peel and cube sweet potatoes .sweet potatoes: 2.5 lbs

2Boil in salted water until tender.

3Drain and return to pan.

4Mash with butter and reserve.butter: 2 tbsp

5Check for salt and adjust.salt

6In a mixing bowl, add eggs , maple syrup , vanilla , cayenne , allspice , salt , buttermilk , and milk .eggs: 2, maple syrup: 4 tbsp, vanilla: 1/2 tsp, cayenne: pinch, allspice: pinch, salt: 1/2 tsp, buttermilk: 4 tbsp, milk: 1/3 c

7Add sweet potatoes to egg mixture.

8Add small amounts at a time to temper the eggs.

9Transfer to buttered casserole dish .

10Mix pistachios (chopped) , light brown sugar , all-purpose flour , and butter (melted) together.pistachios (chopped): 1/2 c, light brown sugar: 1/2 c, all-purpose flour: 1/3 c, butter (melted): 4 tbsp

11Top sweet potatoes with the pistachio mixture.

12Bake at 350 for ⏱️ 25-30 minutes until potatoes are set and crust is browned.
