Sweet Potato Casserole

  • all-purpose flour

    Peel and cube sweet potatoes .
    sweet potatoes: 2.5 lbs

    Boil in salted water until tender.

    Drain and return to pan.

    Mash with butter and reserve.

    Check for salt and adjust.

    In a mixing bowl, add eggs , maple syrup , vanilla , cayenne , allspice , salt , buttermilk , and milk .

    Add sweet potatoes to egg mixture.

    Add small amounts at a time to temper the eggs.

    Transfer to buttered casserole dish .

    Mix pistachios (chopped) , light brown sugar , all-purpose flour , and butter (melted) together.

    Top sweet potatoes with the pistachio mixture.

    Bake at 350 for ⏱️ 25-30 minutes until potatoes are set and crust is browned.
